Fruitcake
Plain fruit cakes mark Christmas in many European countries.
It is a cake made with candied or dried fruit, nuts and spices. In England, one
gets to taste iced and decorated versions of fruitcake. The history of fruit
cake dates back to ancient Rome, where they were made with pomegranate seeds,
pine nuts and raisin. In the Middle Ages, fruit cakes were made with honey,
spices and preserved fruits. Soon, fruit cakes became popular across European
countries. In 16th century it was found that high concentrations of sugar can
be used to preserve fruits. Sugar from American colonies became cheaply
available in Europe and so, candied fruit became abundant, which made
fruitcakes affordable for common people.
Yule log
Yule log is a traditional Christmas cake popular in countries
such as Belgium, France, Canada, Lebanon, Syria and Switzerland. The French
dish, also known as buche de Noel, is also relished in former French colonies
such as Vietnam.The yule log resembles a log of wood. To make this unique
dessert, first, a flat sponge cake is made on a shallow Swiss roll pan. Then it
is iced on the top and then rolled to a cylinder resembling a log of wood. Then
the top of it is again iced and a fork is dragged on the icing to create a
bark-like texture. Powdered sugar is sprinkled on it to resemble snow. The yule
log is decorated with small branches of tree, fresh berries and mushrooms made
of meringue or marzipan.
Panforte
Panforte, meaning strong bread, is an Italian delicacy. It
originated in the 13th century in the Italian region of Tuscany. The recipe for
a panforte is really simple. Sugar is dissolved in honey and various fruits,
spices and nuts are mixed together with flour. Then it is baked in a shallow
pan and then dusted with icing sugar. In the present day version of this
traditional dessert, a lot of chocolate is also added. Though it is made for
Christmas, Italians love to relish panforte throughout the year.
Bibingka
Bibingka is a rice cake especially made during the Christmas
season in Philippines. Weeks before Christmas, you can see vendors selling this
traditional delicacy outside churches here. The ingredients for the cake are
coconut milk, rice water, sugar, milk and galapong. However, in regular
bibingka, galapong is not used and water is used instead of coconut milk. Bibingka
is baked wrapped in banana leaves, which gives it a distinct aroma. It is often
topped with butter, cheese, salted egg and grated coconut.
